At the core of its performance is a dual-heat dynamic with direct radiant heat from the grill surface that instantly triggers a Maillard reaction, creating a perfect sear and sealing in juices; and indirect convective heat within the sealed chamber that cooks food evenly while infusing it with the aroma and flavor of natural charcoal.

Each Mibrasa charcoal oven is handcrafted and hand welded in Palamós, Spain, using proprietary manufacturing techniques and some of the highest-grade stainless steel in culinary equipment.
The finished products, weighing 333 pounds to 591 lbs., have no exposed rivets and are fully hand-welded with no structural screws, no bolts and no assembly.
Unlike open grills, the ovens’ sealed design provides control over airflow, temperature, and smoke through an infinite control damper system. Temperatures range from low roasting to 750°F-plus for searing.
Closing the damper maintains a stable temperature and creates an oxygen-free chamber to work with embers rather than open flames. This also enables smoking and slow cooking between services, as the coal and temperature die down with the dampers closed.
The ovens support a full spectrum of live-fire techniques, including grilling, roasting, baking, smoking, slow cooking, steaming and holding.
Fuel as Craft: Natural Charcoal Only
The ovens are designed exclusively for natural lump charcoal, avoiding the binders and additives found in briquettes and pellets, delivering more than six hours of cooking time. Residual heat enables overnight cooking and braising.
Designed for Safety in Modern Outdoor Environments
The ovens are fully enclosed to significantly reduce fire risk – an essential consideration, espcially in dry climates. The self-contained fire chamber prevents open flame exposure, a heat dissipating chimney filter cools smoke before release and an integrated spark arrester prevents ember escape.

In contrast to app-driven grills and connected devices, the Mibrasa Home ovens are intentionally analog. There are no sensors, no automation, no digital controls – only fire, airflow, and technique.
